To make breakfast cookies, combine naturally sweet whole fruits such as pear, banana or apple into a recipe that includes ground nuts and seeds or nut butters. This combination provides an adequate dose of appropriate calories, healthy fats, fiber, protein, vitamin and minerals for a balanced breakfast. To whip up snack cookies, incorporate fiber-filled raisins, nuts and seeds into snack cookies to sustain energy levels, keep blood sugar levels stable and satisfy your appetite until your next meal. To make sweet cookies, add unsweetened coconut, raw chocolate and honey or maple syrup in place of refined sugars. Cookies made with these ingredients provide a nutritionally superior alternative to processed sweets.

Shrimp Quinoa Spring Rolls:
With the many health benefits of quinoa, I love being to able to incorporate it to my meals, especially when it involves shrimp spring rolls. The quinoa is substituted for the vermicelli noodles and provides such a wonderful light, nutty flavor to these rolls. Best of all, they’re so easy to make and they’re so hearty and filling!
